Vegan Eggs Benedict | Delicious Tofu Scramble with Hollandaise Sauce

This vegan eggs benedict with hollandaise sauce is seriously amazing!

Tofu Scramble:

  1. 1 block firm tofu
  2. oil for pan
  3. mushrooms
  4. sweet peppers
  5. onion or onion powder
  6. 1 teaspoon The Vegg (optional)
  7. tomato
  8. green onion
  9. mustard powder
  10. tumeric
  11. No-Salt seasoning
  12. garlic
  13. tamari or soy sauce

Hollandaise Sauce (from The Complete Guide To Vegan Food Substitutions by Celine Steen & Joni Marie Newman):

  1. 1/4 cup vegan butter
  2. 2 tbsp all purpose flour
  3. 1 cup vegan creamer
  4. 1-2 tbsp fresh lemon juice
  5. 1 tbsp nutritional yeast
  6. Pepper to taste

Other Ingredients:

  1. Yves veggie bacon strips
  2. Asparagus
  3. Naan Bread
