Testing Vegan Recipes – Virgin Vegan Cookbook!

I LOVE trying out new recipes.  Today I tried three recipes from my new cookbook The Virgin Vegan Everyday Recipes for Satisfying Your Appetite by Donna Kelly and Anne Tegtmeier.  (Hint hint: they were all pretty amazing!)

Book Synopsis: New followers of a plant-based diet are often overwhelmed with the ingredients, recipes, and choices of a vegan lifestyle. Sunrise Sweet Potato Hashbrowns:

  • 1 tablespoon coconut or olive oil
  • 2 sweet potatoes
  • 1 medium onion
  • 1 teaspoon salt
  • 1 red pepper
  • 3 cloves garlic
  • 1/2 cup fresh cilantro (or fresh basil)
  • 1/3 cup unsweetened shredded coconut
  • juice and zest of one lime

Tangy Spicy Ketchup:

  • 1 tablespoon oil
  • 1 clove garlic
  • 1 cup ketchup
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon chili powder
  • dash pepper

Secret Ingredient Chocolate Pudding:

  • 1 ripe avocado
  • 1/3 cup agave or maple syrup
  • 1/4 coco powder
  • 1 teaspoon vanilla
  • 1 1/4 teaspoon salt
  • 3 tablespoons non-dairy milk
