Here comes another vegan cookbook recipe test and review! Today I test The Vegan Divas: Delicious Desserts, Plates, and Treats from the Famed New York City Bakery by Fernanda Capobianco.

Recipes:

Detox Granola

  1. 2 cups rolled oat
  2. 1/2 cup sliced almonds
  3. 1/4 cup chopped walnuts
  4. 1/4 cup brazil nuts
  5. 1/4 cup unsweetened coconut
  6. 1/4 cup ground flax seed
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon cinnamon
  9. 1/4 teaspoon cloves
  10. 1/8 teaspoon nutmeg

Preheat oven to 325

  1. 1 1/2 tablespoon melted coconut oil
  2. 1/4 cup pure maple syrup

Cook for 15-20 mins

  1. 1/2 cup dried apples
  2. 1/2 cup raisins
  3. 1/4 cup dried cherries
  4. 1/2 cup dried cranberries
  5. 1/4 cup dried apricots
  6. 1/4 cup dried figs

Walnut Pate Apple Sandwich

  1. 1 cup toasted walnuts
  2. 1 can rinsed white beans
  3. 2 tablespoons fresh lemon juice
  4. 1-2 cloves garlic
  5. 2 teaspoons olive oil
  6. 1/4 cup water
  7. Salt and pepper

For the assembly:

  1. Bun
  2. Apple slices
  3. Roasted pepper
  4. Spinach

Spicy Carrot Cake

  1. 1 1/2 cup whole wheat flour
  2. 1/2 cup all purpose flour
  3. 2 teaspoon baking powder
  4. 1 teaspoon baking soda
  5. 1 1/4 cup sugar
  6. 1 cup crushed canned pineapple with juice
  7. 2/3 cup plain vegan yogurt
  8. 2 teaspoon vanilla
  9. 1 teaspoon cardamon (I used sprinkle of cloves)
  10. 1 teaspoon cinnamon
  11. 1 teaspoon nutmeg
  12. 1 teaspoon giner
  13. 1 teaspoon salt
  14. 1/4 cup melted coconut oil
  15. 1/2 cup walnuts
  16. 1/2 cup raisins
  17. 2 cups shredded carrot
  18. Powdered sugar for dusting

Cook for 25-30mins at 350 if using two 8 inch round pains (10 minutes longer is using one 9×13 pan)
